Description
The vacuum evaporation technique is employed in producing this natural sweetener. An indirect heating source using steam at a very low temperature, which does not exceed 80 ?C is used for processing of cane juice. This yields high-purity jaggery with a fine texture. Furthermore, the sweetner (jaggery) made in this method is not centrifuged unlike in the sugar factory or a raw sugar unit and helps in retaining natural vitamins, minerals and other nutrients. The main advantage of the evaporated method of jaggery production (we call it as “ECJ – Evaporated cane juice) is that the molasses is absorbed in the Jaggery itself. Due to the low temperature there is no possibility of formation of heat generated toxic chemicals like acrylamide. The result is a superior form of jaggery. Our jaggery is unrefined, raw, unbleached, vacuum evaporated whole cane juice and has?high ORAC (Oxygen Radical Absorption Capacity) values and medicinal properties.
